Jean-Baptiste Bordeaux-Montrieux převzal vinařství v roce 1980. Vína byla vždy vyráběna velmi tradiční metodou: fermentované v sudech po dobu dvou týdnů, poté zrající v sudech dvanáct až osmnáct měsíců (padesát procent nového dubu pro 1er Cru) a filtrováno jen velmi lehce, pokud je to nutné. Bílá vína jsou fermentována a stárnou v sudech. Fermentace začíná spontánně a jde vlastním tempem, někdy trvající měsíce. U Montrachetu od ročníku 2010 je používáno průměrně padesát procent nových sudů.
History
The Thenard family has owned land in Givry since 1760, but the estate was not officially founded until 1842. Thirty years later, in 1872, Baron Paul Thenard acquired two large parcels in Le Montrachet, totalling 1.86 hectares. This transaction put the domaine on the map making the Thenards the 2nd largest landholder in Montrachet behind only the Marquis de Laguiche, with their single parcel of 2.06 hectares. Additional vineyard acquisitions in the 20thcentury of the grand cru vineyards Clos du Roi in Corton and Les Grands Echezeaux in Flagey made Thenard one of the most important estates in Burgundy. The heart of the domaine remains in the humble village of Givry, and has been under the direction of Baron Jean-Baptiste Bordeaux-Montrieux (his grandmother was a Thenard) since the early 1980’s. Their approach to winemaking remains traditional, and the wines have a wonderful potential to develop over time.
In AD 92 the Roman emperor Domitian forbade planting new grapevines outside Italy. Indeed, some of the vines of Burgundy were ripped out to lessen competition. The vines that remained sufficed for local needs. The edict was annulled in AD 280. The Montrachet vineyard was first planted in the Middle Ages. Although the date of its establishment is unknown, Pierre and Arnolet de Puligny gifted wines in „Mont Rachaz“ to the Abbey of Maizières in 1252.[2]
The Appellation Controlée system was introduced in Burgundy in 1935. Montrachet and Bâtard-Montrachet (see below) were both recognised as AOC Grands Crus in 1937.
